They are harvested in autumn, at full maturity, when they turn scarlet, then dried whole or cut into rounds that show the pale flesh and the pips. Dried, the slices are red-brown, supple, a little leathery; the taste is frankly tart, the sharpness of an over-ripe apple which an underlying sweetness catches up. The pectin they contain sets jellies and thickens compotes.
